Honey Cake

Makes 10 portions

Ingredients

• 2lb plain flour

• 4 teaspoon cinnamon

• 4 teaspoon mixed spice

• 4 teaspoon bicarbonate of soda

• 4 eggs

• 1lb 8oz caster sugar

• 0.48 ltr orange juice

• 750 grams honey

• 0.48ltr veg oil

Method

1. Preheat oven 180c

2. Place eggs and sugar in a mixer until pale and creamy

3. Transfer to a large bowl

4. Sift flour and spices together

5. Dissolve bicarbonate of soda in orange juice

6. Add all the above together and mix well.

7. Then add honey and veg oil, mix well

8. Cook at 170c/325f/gas3 for 35-45

Serve with cream or Ice cream
